Happy February!

Breakfast (10:00 a.m. Not pictured): Had two pieces of Raisin Pecan Crisps that I got yesterday from Corner Bakery. I’m kind of addicted to this dried bread, sprinkled in sugar.

Lunch (11:30 a.m.): Had lunch at Corner Bakery with Roxanne and Nicole (yep, two days in a row). I had Trio (three side dishes), with Green Salad, Asian Edamame Salad, Southwestern Avocado Wedge, and Caprese Tomato Salad … mmm.

Pre-Workout Meal (4:30 p.m. Not pictured): I was so hungry when I got home from work that I had a bowl of rice, shredded cabbage, and five slices of shabu shabu pork, with goma sauce. I felt like I ate a little too much but this got me through a tough Kangoo workout with Saori.  Oh, and I ate a handful of Pucca.

Workout: One of the action items for 2012 (aka New Year’s Resolutions) is to work out every day for an entire month, for at least 30 minutes. It doesn’t matter what I do, as long as I’m moving, sweating, and getting my heart rate up!

Shannon (who decided to join me) and I selected this month to do this because February is the shortest month of the year, with only 29 days! (Yes, this is how we roll.lol)

Day 1 was a success. Roxanne and I walked up 12 flights of stairs at the office today after lunch. We actually did this yesterday as well. I really struggled with it yesterday (and stopped a few times, from floors six to about nine), but I was able to climb up steadily, without any stops today! It felt great but the downside was that I sweat profusely for at least 10 minutes when I got back to my desk. Thank goodness I didn’t have any meetings in the afternoon.

Saori came over and trained me tonight. We “hopped” to the nearby park and did an hour of intense but fun workout using Kangoo Jumps. I can’t believe how much I’m enjoying this workout! I’m seriously in love with it.

Dinner (8:30 p.m.): After the workout, I prepared this nameless dish.  I pretty much tossed everything I had in the refrigerator, not really caring what it would taste like, but I was pleasantly surprised to find that it was pretty darn good. It’s an udon dish, with shredded cabbage, shabu shabu pork slices, natto, tororo, squid kimchi, green onion, with goma sauce and ponzu.

Action Items for 2012

I completely contradicted what I said before about New Year’s resolutions and came up with some for 2012.lol Some are straight-forward resolutions while other are monthly challenges.  I would like to think of these as action items, with deadlines!

I plan to blog about these challenges and keep you posted on how things are going!

Action Items for 2012

1. Survive on a $100 grocery budget for an entire month
2. Eat vegetarian diet for an entire month (not vegan, unfortunately, since I love honey and yogurt too much)
3. Dine at home for an entire month (except when I’m traveling when I have no choice but to dine out)
4. Work out every day for an entire month
5. Cook from the Tanita cookbook for an entire month
6. Run 10 half marathons this year (full marathon counts as two half marathons)
7. Read at least 12 new books this year
8. Save at least $20,000 this year
9. Make at least $1,200 from Etsy business this year
10. Lose one pound a week and maintain it for life

Lunch (12:00 p.m.): I’m glad my New Year’s resolution didn’t include waking up early because I totally slept in this morning. I had a leftover soup from yesterday for lunch. This is the soup that has been passed down from my father’s side of the family for years. Just like Thanksgiving dinner, we, for some reason, only eat this once a year. We should definitely change that because the soup is out-of-this-world delicious.

Afternoon snack (3:00 p.m.): Smoked salmon sandwich with leftover Italian bread, with Arnold Palmer from Trader Joe’s. It’s way too sweet so I added water to dilute the drink.

Dinner (6:45 p.m.): Sliced onion, avocado, and smoked salmon salad, plus croutons. This is pretty much the same thing I had as an afternoon snack but deconstructed.

Okay, off to cleaning the apartment!  I’m looking forward to the start of the work year tomorrow.  I know that this going to be an amazing year for me, both professionally and personally, and it will be for you as well!
